2-Layer Cranberry Cream Cheese Mold

2 – 3 oz. pkgs. cherry Jell-O
2 c. boiling water
12 oz. cranberries
1 med. apple, cored
1 c. sugar
3/4 c. walnuts, chopped
3 oz. cream cheese, softened*
1 c. heavy cream
1 1/2 c. miniature marshmallows*

Stir together Jell-O and boiling water, chill until syrupy. Grind cranberries and apple together, add sugar, set aside. Fold in cranberry mixture and nuts to the partially set Jell-O. Pour in a 2 qt. dish, cover and chill until set. Whip cream cheese in a bowl until creamy. Add cream at low speed, don’t whip. Stir in marshmallows. Cover. Chill overnight to soften marshmallows. Whip chilled marshmallow mixture at high speed until thick and all of the marshmallows have dissolved. Spread on set cranberry mixture.
*Note: Put the cream cheese and marshmallows in a qt. glass measuring cup. Put in the microwave for 30 seconds to warm up. Stir well, then let cool. Add the cream and whip until thick.
