Perfect for Valentines or any Holiday!

Our daughter, Jenny, recently made these beautiful filled cupcakes for a special friend, Sarah, for her birthday.  They would be a perfect dessert for Valentine’s Day, Birthday Celebration or for “just because”.

Short on time...so we used a cake mix this time! 🙂

We were in a hurry this time, so just mixed up a Devil’s Food Cake Mix as directed.  The real recipe is delicious though and very easy to make.

Fill lined cupcake holders 2/3 full.

Place paper liners in cupcake pan and fill 2/3 full.  We use an ice cream scoop to make it easy to fill the little cups.

The filling is so easy and just adds so much to a cupcake!

Beat the cream cheese, egg and sugar together, then fold in chocolate chips.  This easy filling takes these cupcakes from ho hum to YUM YUM!!!

Carefully use a small cookie scoop to put the filling into the cupcake batter.

A small cookie scoop (available at Adrians, of course) works GREAT to place the yummy filling into the cupcake batter.

Ready to pop into the oven!

Bake cupcakes for 20-25 minutes at 350…then let cool before frosting.

The "icing on the cake!"

Frost cooled cupcakes with chocolate frosting, then decorate with purchased cupcake frosting, sprinkles or use your imagination!  These can be decorated for birthdays, any holiday or just as a special treat for your family!

The finished cupcakes! Ta-Da!!!

You can make these as fancy as you want!  You will make someone’s day when you bring them a plate of these!

Pretty sure you'll want to eat more than one!

Chocolate Surprise Cupcakes
Jocelyn Phillips

3 c. flour
2 c. sugar
1/2 c. cocoa
1 tsp. salt
2 tsp. soda
2/3 c. oil
2 c. water
2 T. vinegar
2 tsp. vanilla

Filling:
8 oz. cream cheese, softened
1 egg
1/2 c. sugar
1/4 tsp. salt
6 oz. chocolate chips

Frosting:  Use purchased chocolate fudge frosting and then decorate with sprinkles and decorations.

Mix together flour, sugar, cocoa, salt and soda.  Add oil, water, vinegar and vanilla and beat well.  Fill lined cupcake holders 2/3 full.  Blend cream cheese with egg, sugar and salt. Beat well.  Stir in chocolate chips.  Drop one heaping teaspoon of filling into the center of each cupcake.  Bake for 20-25 minutes at 350.  Frost with chocolate frosting and decorate as desired with frosting and sprinkles.

This recipe comes from my very first “real” boss, Jocelyn Phillips, at my first full-time job at a stock brokerage company in downtown Denver over 30 years ago.  She was a very professional woman and taught me to come to work, ready to work, and give 110% each and every day! This is a great recipe! I love the idea of the cream cheese/chocolate chip filling on the inside of the cupcakes! I’m definitely gonna have to make these sometime!

Thank you for your kind comment! Now you know why this recipe has been in my “favorites” box for over 30 years! I remember the first time my boss brought these in to work and we all loved them! It was just a fun “surprise” to find that delicious filling inside the cute cupcakes… Of course, this was W A Y before the current cupcake craze that is going on on the Food Network and in magazines all over!
