1 c. butter, softened
1/3 c. confectioners sugar
1 c. ground almonds
1 tsp. almond extract
2 c. all-purpose flour
Garnish: Additional confectioners sugar, edible glitter, if desired
Preheat oven to 350 degrees. Lightly grease baking sheets. In a large mixing bowl, beat butter and confectioners sugar until creamy. Add almonds and almond extract. Beat well, slowly beat in flour. Shape dough into 1 inch balls. Place on baking sheets and bake for 18 minutes or until lightly brown. Watch carefully – 10 minutes may be all you need. Immediately remove cookies (3 to 4 at a time) into a plastic bag with confectioners sugar and shake gently to coat cookies well. Yield: 3 dozen.
