Banana Cake
2 1/4 c. cake flour, sifted
1 tsp. baking soda
1 tsp. baking powder
1 tsp. salt
1/2 c. vegetable oil
1/2 c. buttermilk
1 1/4 c. mashed banana (about 3 bananas)
2 eggs
1 1/4 c. sugar
Sift together flour, soda, baking powder, and salt. Add the oil, buttermilk, and bananas. Beat until it forms a very smooth batter. In a separate bowl, beat the eggs until think and foamy. Gradually add the sugar and continue beating until very well blended. Fold this egg and sugar mixture thoroughly into the batter. Pour into the greased and floured 13×9 inch pan. Bake in a moderate oven (350 degrees) 35 to 40 minutes. Cook in the pan and frost.
