Best-Ever Holiday Fruit Cake

1 lb. pecans, chopped
1 lb. candied cherries-red & green, chopped
1 lb. candied pineapple, chopped
1/2 lb. butter (no substitutes)
1 c. sugar
5 eggs
2 c. flour
1/4 tsp. baking powder
1 tsp. lemon extract”
1 tsp. vanilla extract

Combine pecans and candied fruit in a large bowl. Add 1 c. of flour to that mix and stir well. In a smaller bowl, mix the remaining ingredients; beat well and pour over mixture of nuts and fruit.  Stir well. Pour into buttered angel food or bundt pan and bake at 350 degrees for 1 hour and 15 minutes. If using a lighter pan, reduce heat to 325 degrees and bake 20 minutes longer. When cool wrap in plastic or foil and store in refrigerator. 15-20 small servings.
