Blackberry Whole Wheat Coffee Cake

Blackberry Whole Wheat Coffee Cake

1 1/2 c. flour
1 1/3 c. brown sugar
1 c. whole wheat flour
2 tsp. baking powder
1/2 tsp. baking soda
dash salt
1 egg
1 c. buttermilk
1/3 c. canola oil
1/3 c. applesauce
2 tsp. vanilla extract
2 c. fresh or frozen blackberries

In large bowl, combine first 6 ingredients. In another bowl combine the egg, buttermilk, oil, applesauce and vanilla. Stir into dry ingredients just until moistened. Fold in blackberries. Pour into a lighly greased 13 x 9 baking pan. Bake at 375° for 35-40 minutes or until a toothpick inserted near the center comes out clean. Cool on wire rack.
