Blender Waffles

2 1/4 c. flour
1/4 c. cashews or pecans
1/4 c. oatmeal
2 T. wheat germ
1 tsp. salt
1/2 tsp. soda
2 tsp. baking powder
1 c. water
1 c. buttermilk
2 T. honey
2 eggs
1/2 tsp. vanilla
1/4 c. butter, melted

Place all ingredients in a blender and blend.  Bake in waffle iron. Makes 6 round waffles.

*Note: Ruth (Vicki’s Mom) has been making these delicious waffles since the early 1970’s. This is an often requested recipe when any of us kids go home to visit.  Serve with maple syrup or fresh fruit (or both!).
