Carrot Bars
2 eggs, beaten
1 c. sugar
3/4 c. vegetable oil
2 sm. jars of carrot baby food
1 1/4 c. flour
1 tsp. soda
1 1/2 tsp. cinnamon
1/2 tsp. salt
1 tsp. vanilla
1/2 c. chopped pecans(optional)
Mix flour, salt, soda, and cinnamon together. Mix into the rest of the ingredients and bake in a 9×13 pan (slightly greased) for 25 minutes at 350 degrees. Cool and frost
Frosting
1 1/2 c. powdered sugar
3 oz cream cheese
1/4 c. soft margarine or butter
1 tsp. vanilla
Sometimes I put pecans on top of the bars, or in the frosting for a new twist!
