1 lb. Velveeta cheese, softened
8 oz. cream cheese, softened
4 oz. green chilies, chopped
2 oz. black olives, chopped
1 bunch green onions, finely sliced
1 c. walnuts or pecans, finely chopped (optional)
Place Velveeta cheese between 2 big pieces of parchment or wax paper. Using a rolling pin, roll out into a thin rectangle. Separately, mix cream cheese, green chilies, black olives, green onions and nuts. Spread over the Velveeta rectangle. Roll up like a jelly roll, pulling the paper away as you go. Slide onto a sheet of Saran wrap and seal. Chill. Serve with assorted crackers.
