Cheeseburger Soup

1 lb. hamburger
3/4 c. onion, chopped
3/4 c. celery, sliced
1 tsp. fresh parsley, chopped
3 T. butter
2 c. chicken broth
1 can cream of celery soup
1 can water
4 large potatoes, diced

Cook and drain hamburger. Saute onion, celery, carrots and parsley in butter.  Place remaining ingredients in a large soup pot; add hamburger and sauted vegetables.

White Sauce:
3 T. butter
1/2 c. flour
3 c. milk
1/2 lb. Velveeta cheese
1/4 c. sour cream

Brown the butter and flour together. Add milk and stir until thick. Cut Velveeta cheese into chunks. Stir into white sauce until melted. When the potatoes are cooked, pour cheese sauce into the soup pot.  Mix well. Just before serving, add sour cream. Stir until all is blended and melted.
