Pam Rush

2 sticks butter
1 c. Pepsi or Coke (not diet)
1/4 c. cocoa
2 c. flour
2 c. sugar
1 tsp. cinnamon (Pam uses Vietnamese cinnamon)
1/4 tsp. nutmeg
1/4 tsp. salt
1/2 c. buttermilk or sour milk
2 eggs, lightly beaten
1 tsp. vanilla (Pam uses Mexican vanilla)
1 tsp. baking soda
Place 2 sticks of butter and Coke into a 1 qt. glass measuring cup. Microwave on high until melted. Sift together cocoa, flour, sugar, cinnamon, nutmeg & salt and add to the butter mixture. Mix well. Mix buttermilk, lightly beaten eggs and vanilla together, then add to the flour mixture and combine well. Last add in 1 tsp. baking soda…don’t forget! Pour into a greased 15 x 10 x 1 jelly roll pan. Bake for 20 minutes at 400°. While the cake is baking, make the frosting:
Frosting:
1 stick butter
1/4 c. cocoa
6 T. Coke or Pepsi (not diet)
1 lb. powdered sugar
1/2 to 1 c. walnuts or pecans, chopped, optional
Place butter and cocoa into the same glass measuring cup. Microwave until it comes to a boil. Stir in Coke and powdered sugar with a mixer. Stir in nuts if desired. Spread on cake as soon as it comes out of the oven. Let cool and enjoy! This has been a family favorite for over 40 years! :0)
Pam’s Note: I have used a Cherry Pepsi. DO NOT use diet pop. Have not tried Dr. Pepper!!!
*Note: Pam surprised us with a plate of this sheet cake one Saturday morning… needless to say, all that was left were a few crumbs! 🙂 Very moist, rich & fudgy. Thank you Pam!

Sounds wonderful! Can’t wait to try it! Have tried something similar sounding, called Texas Sheet Cake, which uses coffee, in place of Coke, it’s wonderful as well!

Hi,
Does anyone know where you get the cinnamon that was in this recipe and “why” it would be any better ?? I’m not one to buy special ingredients for recipes, unless there is a big difference in taste.
Hi Rosie…I don’t think you would need to purchase any special cinnamon. Pam is a true “Baker’s Baker” and would already have some specialty ingredients. I just use plain ‘ole cinnamon…it will be delicious! Thank you for your comments! Vicki
