Chocolate Mint Cheesecake Cups
3/4 c. light process cream cheese
1/2 c. sugar
1/2 c. 1% low-fat cottage cheese
2 T. all-purpose flour
3 T. unsweetened cocoa
3 T. creme de menthe
1/2 tsp. vanilla
1/8 tsp. salt
1 egg
1 pkg. semi-sweet chocolate mini morsels
Place first 9 ingredients in electric blender; cover and process until smooth. Spoon batter evenly into 24 paper lined mini muffin pans. Top each with 4 to 5 chocolate morsels. Bake 18 minutes at 300 degrees. Let cool in pans on wire rack. Cover and chill at least 2 hours.

I love chocolate and mint and cheesecake !! But I don’t know if this receipe is for the cupcake part or for the green topping……something is missing here.
This is for the cupcake part…the topping is just cool whip with a little green food coloring and a touch of creme de menthe…So sorry!!!!! Thank you so much for reading! Vicki
