Chocolate Peanut Butter Whoopie Pies
12 oz. mini semisweet chocolate chips
2 T. milk
3/4 c. butter
1/4 c. creamy peanut butter
1 1/2 c. sugar
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
2 eggs
1/2 c. milk
1 tsp. vanilla
1/2 c. cocoa
3 c. flour
Preheat oven to 350 degrees. Set aside 1/4 cup chocolate pieces to sprinkle on cookies. In microwave bowl, combine 1 cup chocolate chips and milk. Microwave on 50% power for 1 minute or until melted; stir once. Set aside. Beat butter and peanut butter with mixer until combined. Add sugar, soda, baking powder and salt, beat to combine. Add eggs, milk, vanilla and melted chocolate; beat until combined. Sir in remaining chocolate chips. Drop by rounded teaspoonfuls 2 inches apart onto ungreased cookie sheets. Sprinkle with reserved chocolate chips. Bake 9 mintes or until tops are set. Cool on sheets 1 minute. Transfer to wire racks, cool completely. To assemble, spread flat sides of half the cookies with filling; top with remaining cookies. Makes 30 sandwiches.
Filling:
1 c. creamy peanut butter
1 c. marshmallow cream
2 c. powdered sugar
2 T. milk
Beat peanut butter, marshmallow cream and powdered sugar with electric mixer until combined If needed, beat in 2 T. milk until spreading consistency.

This recipe says to beat butter, peanut butter and powdered sugar for the filling, but in the list of filling ingredients butter is not listed. I was wondering how much butter to use. I think something might have been left out. Thanks.

Hi Joan… I’m pretty sure it would be about a ka-zillion calories! This would have to be an “at your own risk” kind of recipe…so make up a batch…take them somewhere where there’s a crowd and make sure you don’t bring any home! (That is always my plan at least!) So sorry, but I don’t have that information for you…some things we just shouldn’t be allowed to know! 🙂 Thank you so much for reading our blog! I always use my Kitchen Aid mixer to beat, mix, blend everything…the exception would be like folding in whipped egg whites, or something very sensitive like that. Enjoy! Vicki
