Chocolate Zucchini Sheet Cake
2 c. sugar
1 c. oil
3 eggs, room temperature
2 1/2 c. flour
1/4 c. cocoa
1 tsp. baking soda
1 tsp. baking powder
1/4 tsp. salt
1/2 c. milk
1 T. vanilla
2 c. zucchini, shredded
Combine sugar and oil in a large mixing bowl, add eggs 1 at a time, beat well. Sift together flour, cocoa, baking soda, baking powder, and salt. Mix milk and vanilla and add. Stir in zucchini. Pour into a greased 15 x 10 x 1 cookie sheet. Bake at 375 degrees for 25 minutes.
