1 c. sugar
1/2 c. light corn syrup
1 T. butter
2 c. cocktail peanuts
1 tsp. baking soda
1 tsp. vanilla extract
non-stick cooking spray
Spray a large rimmed baking sheet with cooking spray; set aside. Mix sugar and corn syrup in a large microwavable bowl until moistened. Microwave on high for 5 minutes (use pot holders as candy mixture gets VERY hot!) Remove from microwave and stir in butter and peanuts. Microwave an additional 3-4 minutes or until pale golden brown. Remove from microwave and add baking soda and vanilla. Mixture will foam. Immediately spread mixture as thinly as possible onto prepared baking sheet. Let cool completely and break into pieces.
