Easy Zucchini Biscuit Bars

3 c. thinly sliced zucchini, unpeeled
1/2 c. finely chopped onions
2 T. fresh parsley, chopped
1/2 tsp. salt
1 garlic clove, minced
4 eggs, at room temperature, slightly beaten
1 c. baking mix (Bisquick or similar)
1/2 tsp. grated parmesan cheese
1/2 tsp. oregano
1 dash pepper
1/2 C. vegetable oil

1. Preheat oven to 350 degrees
2. Combine all ingredients in a large bowl and mix well
3. Spread evenly into a greased 9×13 inch pan
4. Bake for 35 minutes or until golden.
