Eggnog Pie (Christmas Pie)

1 tsp. gelatin
1 T. cold water
1 c. milk
3 egg yolks
1/2 c. sugar
1/4 tsp. salt
2 T. cornstarch
1 1/2 tsp. vanilla extract
1 tsp. almond extract
1 c. whipping cream, whipped with mixer
1/2 c. almonds, chopped and toasted
6-7  maraschino cherries, diced & divided
1 baked pie shell or 1 graham cracker crust (9 inch)

If baking your own crust, bake and set aside to cool.  Dissolve gelatin in cold water.  Place following ingredients into a microwave safe bowl and cook on medium stirring often; milk, sugar, salt and cornstarch, egg yolks.  When thickens to pudding consistencym, add both vanilla and almond extracts and gelatin mixture.  Let cool.  Fold in 1 cup of whipped whipping cream, chopped almonds and part of the cherries.  Place filling in cooled pie shell.  Garnish with remaining diced cherries.  Place in refrigerator until served.  This was a “MUST have” dessert for Christmas dinner when our family comes home for Christmas!
