3 c. graham cracker crumbs
1 stick butter, melted
Mix together, press into a 9 x 13 pan and set aside.
2 (small) Lemon Jell-o
2 c. boiling water
Dissolve in 4 c. measuring cup, let partially set.
1 (8oz.) pkg. cream cheese
1 c. sugar
3 T. fresh lemon juice
1 t. vanilla
grated lemon rind
Cream all together, fold in Jell-o
1 (8oz.) carton cool whip
Fold into the cream cheese mixture.
Pour the cream mixture on top and refreigerate till set.
Optional: Sprinkle top with graham cracker crumbs or top with canned fruit.
Note: I have used orange jell-o and then folded in mandarin oranges. I think any kind of jell-o with matching fruit would work.
