2/3 c. white wine vinegar
2/3 c. olive oil
1/4 c. onion, finely chopped
2 cloves garlic, minced
1 tsp. salt
1 tsp. sugar
1 tsp. dry basil, crushed
1 tsp. dry oregano, crushed
1/4 tsp. pepper
Combine in a saucepan and bring to a boil. Simmer uncovered for 10 minutes. In a separate bowl, mix:
8 oz. fresh mushrooms
4 oz. artichoke hearts, cut in half
1 c. pitted lg. black olives
1 c. lg green olives
1 1/2 c. cherry tomatoes
1 c. broccoli (optional)
1 c. cauliflower (optional)
Add sauce to vegetables and chill for several hours and enjoy.
