Meyer Three-Layer Jell-O

Ruth Meyer
Castle Rock, Colorado

1 lg. pkg. red Jell-O (cherry, strawberry, etc)
1 lg. pkg. lemon Jell-O
1 lg. pkg. lime Jell-O
8 oz. cream cheese
1/3 c. mayonnaise
1 c. white miniature marshmallows
1- 20 oz. can crushed pineapple

Follow directions to make red Jell-O and Lime Jell-O using a little less cold water than suggested.  Pour dissolved lime gelatin into 9 X 12 pan and place in refrigerator until set.  You can mix both of these at the same time but leave the red gelatin in a bowl to start to set.  Dissolve the lemon gelatin in hot water only.  Place in blender and add cream cheese, mayonnaise, marshmallows, and pineapple.  Pour into bowl and place in fridge to to begin to set.  When lime mixture is set, pour lemon mixture over and let it set.  Pour red gelatin carefully over lemon mixture when it is set.  Cut in squares.  May be served on lettuce leaves.  This salad has been served at Vicki’s (Meyer) family Christmas for decades!
