Mom’s Peanut Butter Pie

1 c. white sugar
2 heaping T. peanut butter, smooth or crunchy
1 c. white sugar
4 eggs
1 tsp. vanilla extract

Preheat oven to 375°. Combine all listed ingredients and mix well. Pour into an unbaked 9 inch pie crust. Bake at 375° for 10 minutes. Turn down temperature to 350° to finish baking. The baked pie with have a texture and consistency very similar to a pecan pie. The pie forms a crunchy top when baked. When done it will be brown and almost firm in the center. Very rich.
