Dressing
1/2 c. vegetable oil
1/4 c. orange juice
2 T. red wine vinegar
1 T. sugar
1/4 tsp. salt
1/4 tsp freshly ground pepper
1/2 tsp. orange peel, finely grated
Garnish
1 T. butter
1/2 c. walnuts, coarsely chopped
Salad
1 pkg. baby spinach
1 or 2 cucumbers, peeled & chopped
2 oranges, peeled & sliced into rounds
1 sm. red onion, sliced into thin rings
Place dressing ingredients in jar and shake well. Toss oranges, cucumbers, spinach and onions together. Melt butter and saute walnuts until crisp. Remove from heat and add 1/4 tsp. salt. When ready to serve add dressing to salad and toss. Add walnuts and toss again.
