2 cups sugar
2 cups pumpkin puree
4 eggs, beaten
1 cup vegetable oil
2 cups flour
2 tsp. baking soda
2 tsp. baking powder
1 Tablespoon Outrageous Pumpkin Spices (available at Adrians)
1/2 tsp. salt
FROSTING:
3 cups powdered sugar
1/2 cup butter, softened
1 ounce cream cheese
Preheat oven to 350 degrees. Beat together sugar, pumpkin, eggs & oil. Stir flour, baking soda, baking powder, Outrageous Pumpkin Spices, and salt together and blend in. Fill muffin cups 2/3 full with batter. Bake for 30 minutes. Cool.
Mix powdered sugar, butter and cream cheese together and whip until smooth. Frost cooled cupcakes. Garnish with nuts, candies, etc. YUM!
NOTE: We have prepared the same batter and baked in a Jelly Roll Style pan… 325 degrees for approx 30 minutes. Perfect!
