Pecan Chicken Salad
2 c. cooked chicken breast, chopped
1 1/2 c. seedless grapes
1/2 c. diced celery
1 c. chopped pecans
1/2 c. sliced green onions
1 c. mayonnaise
1 T. lemon juice
1/4 tsp. black pepper
1/4 tsp. salt
In a medium bowl, combine mayonnaise, lemon juice, salt and pepper. Mix in chicken breast, grapes, celery, pecans and green onion. Serve immediately or chill. May be served as a sandwich on croissants.
