2 c. sugar
2 tsp. baking soda
2 c. unsifted flour
2 eggs
2-8 oz. cans crushed pineapple
Mix dry ingredients. Add eggs and pineapple. Beat or stir until well blended. Bake in a greased and floured sheet cake pan at 350° for 20-30 minutes. Test with toothpick. Frost while cake is hot.
Cream Cheese Frosting
1 stick margarine, softened
6 oz. Philadelphia cream cheese
1 box powdered sugar (about 4 1/2 cups)
2 tsp. vanilla
chopped nuts, optional
Beat softened margarine and cream cheese together. Mix in powdered sugar and vanilla. Frost cake while hot, and garnish with nuts if wanted.
