Raw Apple Cake

3/4 c. margarine
1 1/2 c. whit sugar
2 eggs, well beaten
2 1/4 c. flour
1 1/2 tsp. soda
1/2 tsp. salt
3/4 c. strong cold coffee
1 tsp. vanilla
3 c. chopped apples
3/4 c. brown sugar
1 1/2 tsp. cinnamon
3/4 c. chopped nuts

Cream together margarine, sugar and eggs. Add flour, soda, salt, coffee, and vanilla. Fold in apples. Pour into greased 9 x 13 pan. Mix brown sugar, cinnamon and nuts. Sprinkle over top. Bake at 350° for 45-50 minutes. After cake is cool you may drizzle with a glaze or dust with powdered sugar. If serving for dessert, omit the topping and serve with a caramel or vanilla sauce.
