small zucchini diced
1small yellow squash diced
1 med cucumber peeled seeded and diced
1 red pepper and 1 yellow pepper diced
1 small garlic clove minced
1 Tbsp fresh grated ginger
1/2 pkg rice noodles soaked in hot water for 10 min. Drained and cut into shorter lengths
2 green onions diced white and green
Dressing :
1Tbsp each
Rice wine vinegar , sesame oil,
Juice of 1/2 lemon
1 tsp sea salt
1/4 – 1/2 cup chopped cilantro
You could substitute rice, couscous , or quinoa for rice noodles , or grain of choice.
Drizzle of olive oil. Opt
