Scalloped Rhubarb

3 c. stale bread
2 c. uncooked rhubarb
1 c. sugar
1/2 c. melted butter or oleo
Red food coloring

Remove crust from bread and dice it in 1/2 in. pieces.  Dice rhubarb in 1 in. pieces.  Mix together melted butter and red food coloring.  Add bread to butter and red food coloring and mix well.  Mix in sugar and rhubarb.  Put in greased 2 quart glass baking dish.  Add 1 T. of water in each corner of pan.  Bake 45 minutes at 325.  May be used as an accompaniment to the main course or as a dessert.
