2 1/2 lbs. hamburger
1 onion, diced
1 tsp. salt
1/2 tsp. pepper
1/2 tsp. garlic
1 can cream of mushroom soup
1/3-1/2 c. milk
1 lb. frozen corn
8 servings of instant mashed potatoes, prepared according to package directions
4 oz. cream cheese, softened
1/2 c. sour cream
6-8 T. butter, divided
parsley for garnish
Brown ground beef with diced onion, salt, pepper & garlic. Drain well. Add cream of mushroom soup to hamburger mixture and mix well. Thin with the milk. Pour into a greased 9 x 13 baking dish. Top with frozen corn. Mix softened cream cheese and sour cream & 3 T. butter into prepared instant potatoes. (I also add a little garlic to the potato mixture). You can use home made mashed potatoes if you prefer. Spoon prepared potatoes around perimeter of baking dish by heaping serving spoon. Garnish with parsley. Cut remaining butter into thin slices and place on top of the potatoes. Bake at 350 for about 40 minutes or until bubbling. Serve hot with some fresh bread and a salad. Yum!
*Note: This is both our son Josh, and daughter, Jenny’s favorite dish from growing up years. Still a great comfort food.
