Strawberry Pizza

Marlene Neufeld
Buhler, Kansas

Crust
1 c. flour
1/2 c. butter, softened
1/4 c. powdered sugar

Prepare crust by blending flour, butter and 1/4 c. powdered sugar. Form into a ball using your hands and then press dough into a 13 inch pizza pan or jelly roll pan. Bake crust at 350 degrees for 10 minutes, until just golden. Cool.

Topping
1/2 c. powdered sugar
4 oz. cream cheese, softened
8 oz. Cool Whip
2 pt. strawberries, rinsed & hulled

In a large bowl, blend powdered sugar, cream cheese and cool whip. Blend well and spread evenly on baked and cooled crust.  Arrange Strawberries in an attractive pattern on top of  cream cheese layer.

*In place of fresh strawberries, you may use frozen sliced strawberries, drained.

Glaze
1 c. sugar
1 1/2 c. water

3 T. cornstarch
3 oz. strawberry gelatin
Blend sugar, cornstarch, and gelatin until no lumps appear. Stir into boiling water. Boil until mixture coats a spoon, 3-4 minutes. Cool before placing on top of the strawberries. Refrigerate before serving.
