Taco Soup

We have served this many times at Adrians Boutique…it is a great make ahead meal…just brown your hamburger & onions ahead of time (you can even freeze it at this point), then just put all of the ingredients into a crock pot and let simmer until hot.

2 lbs. hamburger
1 onion, chopped
46 oz. can tomato juice
1 tsp. cumin
2 cans chili beans
1/2 pkg. taco seasoning
2 c. frozen corn
1/4 c. fresh cilantro, chopped
1 scoop Mama G’s Salsa in a Snap seasoning (Available at Adrians)
(the seasonings are the secret to this great recipe!)

Garnishes:  Taco chips, sour cream, grated cheese, olives, chopped, picante sauce, chopped onion

Brown hamburger and onion; drain. Stir in tomato juice, cumin, chili beans, taco seasoning, frozen corn and cilantro; simmer on medium heat for 20 minutes or place everything in a crock pot and simmer until you’re ready to eat. Put out a toppings bar for your guests and let them help themselves.  Enjoy!
