1 c. sugar
1 tsp. vanilla extract
1 c. peanut butter
1 egg

Jimmy Carter's Peanut Butter Cookies

Preheat oven to 350 degrees. Mix together all ingredients. Form into walnut sized balls. Put on ungreased cookie sheet, then mash down slightly with a fork in a criss-cross pattern.  Bake for 8 – 10 minutes until golden brown.
