3 T. Corn Starch
1 1/4 c. sugar
1/4 c. lemon juice
1 T. grated lemon rind
Combine all together in a pan on top of the stove.
3 eggs (seperated)
Beat yolks, add to above mixture.
1 1/2 c. boiling water
Slowly add to the mixture.
Heat to boiling over direct heat and then boil gently for four minutes, stirring constantly. Pour into baked pie shell. Then make the meringue.
3 Egg whites, room temp.
Beat until stiff…not dry
6 T. white sugar
Gradually beat in sugar.
Spread over the top of the pie, carefully sealing in all the filling by spreading meringue to touch all edges of crust. Bake in hot oven (425 degrees) 4-5 minutes or until browned.
