Italian Sausage & Zucchini Soup

1 lb. bulk Italian sausage
1 c. chopped onion
2 c. chopped celery
1/2 tsp. dried oregano
1/2 tsp. dried basil
1/2 tsp. pepper
2 tsp. salt
2-4 T. sugar, to taste
28 oz. diced tomatoes
2-14.5 oz. diced tomatoes with basil, garlic & oregano
4-5 c. or so of water for desired juiciness
4 c. diced zucchini
grated Parmesan cheese, optional
Italian flavored croutons, optional

In a Dutch oven, brown sausage with onion; drain excess fat.  Add the celery, flavorings, tomatoes and water.  Cover and simmer 1 hour.  Stir in the zucchini and simmer another 10 minutes or so.  Good served with grated Parmesan cheese and Italian flavored croutons instead of crackers.  Leftovers are great warmed up.
