1 pkg. (4 servings) sugar-free instant chocolate pudding mix
10 oz. pkg. soft tofu
1/4 c. Splenda
1 T. unsweetened cocoa
1 1/2 c. heavy whipping cream, chilled
Use an electric mixer to beat the pudding, tofu, Splenda and cocoa powder until very smooth. In a separate bowl, whip the cream until just about stiff. Turn the mixer to its lowest setting, blend in the pudding mixture, and turn off the mixer quickly (so you don’t end up with chocolate butter!) This is a very rich sugar-free recipe! Yum!
